If you ever need to use up a bunch of different veggies or like to make a batch of something healthy to keep in the fridge for lunch, this recipe is for you. And if all you know how to do is boil water, well then you will have to ask a friend to chop up your veggies, but really, this is so simple! You could even make this to bring to a pot-luck or even a COUGHsuperbowlpartyCOUGH.
Ingredients
1 20z pack of cheese tortellini
1 16 oz red wine vinaigrette salad dressing (I prefer Wish-Bone)
1 tablespoon italian seasoning
2 carrots, peeled and finely diced
2 celery stalks, finely sliced
1 red bell pepper, finely diced
1 bunch of green onions, finely diced
(You can mix/match/add-to any of these vegetable ingredients!)
Directions
Boil the tortellini according to the package directions (boil in salted water for 7-9 minutes until cooked through). Drain the tortellini.
Add the tortellini, the whole bottle of dressing, veggies, and italian seasoning to a bowl and stir together.

Other variations:
-instead of red wine vinaigrette, use a greek dressing. Add tomatoes, olives, and feta cheese for a greek version
-experiment with different dressings
This is such an appetizing dish. This is best served with wine. A great way to start a meal.
