Aunt Mary’s Lemon Jello Pound Cake

Ok, this recipe is a childhood favorite.  Growing up, this was my favorite cake besides my granny’s chocolate cake of course!  Yesterday, I couldn’t even wait for the cake to cool before I cut myself 2 slices…yes, 2!  This pound cake has ruined the chances of me liking any other pound cake.  I’ve tried many other pound cakes and none of them compare to this.  What makes this recipe better, is it is an old family recipe passed down from my mom’s Aunt Mary.


Nate went on a small hunting trip with 2 of his close friends.  The crazies left at 2:00am!!!  And men think us women are hard to figure out…I’ll never understand the whole getting-up-ass-crack-early-to-go-sit-in-the-woods thing.  One of his friends has had this pound cake before (I made it for dessert when we had him and his wife over for dinner one night.  Nate of course, cooked the dinner).   After the friend had his first bite of the pound cake he said my dessert beat Nate’s dinner!  I was shocked to say the least.  So you know this pound cake has to be good, I freakin beat a chef’s dinner!  But, don’t tell Nate I told you about that 🙂

Ingredients
1 box Duncan Hines Deluxe yellow cake mix
1 small box lemon jello (used the sugar-free jello, worked perfectly!)
2/3 cup oil
2/3 cup water
4 eggs
2 teaspoon lemon extract
1 teaspoon vanilla extract

Glaze  

1 1/2 cup powdered sugar

juice and rind of 1 lemon
2 tablespoons of orange juice
*I also like to add about 1 tablespoon of orange zest

Directions

MIX CAKE MIX & DRY JELLO
WITH ELECTRIC MIXER: ADD OIL & WATER
    ADD EGGS ONE AT A TIME
        ADD LEMON & VANILLA
POUR IN GREASED & FLOURED BUNDT PAN (OR POUND CAKE TUBE PAN)
BAKE 350 FOR 50 MIN
MIX ALL THE GLAZE INGREDIENTS TOGETHER IN A SMALL BOWL AND DRIBBLE OVER CAKE WHILE STILL HOT

*Yesterday, I just happened to have some blueberries.  So I dumped those into the batter as well.  They sank to the bottom/top, but it still tasted yummy!

  2. Oh, please do let me know how it turns out! This is seriously my favorite cake…ever! Brought it into work with me yesterday and it was gone by lunch time. A few co-workers asked me to make another! haha
